Vegan Moroccan Chickpea Stew
A great recipe and perfect for a winter evening when served with some warm bread, salad and wine! Most of the ingredients are pretty easy to find in your pantry and the only thing that I had to buy were sun dried tomatoes.
Here are some tips based on my experience:
- I have had mixed results with the Instant pot when it comes to soups and stews as it sometimes overcooks things and makes stuff very mushy. I changed the cooking time to be 5 minutes instead of 10 just to be safe
- After opening the instant pot, I added some salt to adjust the taste and let it simmer for some time on the slow cook mode while I got the rest of the meal setup
Everyone in the family loved it and one of our good friends also joined us for dinner and approved of the recipe as well.
