A super easy recipe which turned out be delicious as well. While the original recipe is not vegan you can easily substitute ghee with oil and the paneer with potato or tofu. We had this for our Superbowl party and everyone enjoyed it!
Some additional tips:
- Fry the onions separately so that you don’t have to deglaze the pot
- Collect all the spices before hand so that you don’t have to hunt around while cooking
- The quick release after the 6 minutes is critical otherwise the rice will get overcooked
