OMG!! This recipe turned out to be absolutely amazing! Finally I have a 5 star review from my personal critic (my son). He has been quite inspired by my weekly creations that he decided to make a dessert for himself with fruits, yogurt and granola. Knowing how food is made is a key part of lifelong lessons in healthy eating so I really happy to have him involved in cooking.
It’s weird to even think that cauliflower and cashews can make such an amazing sauce but trust me the recipe is fabulous. I did not follow the instant pot method for the pasta and used the traditional pot method to make cook the pasta and mixed the sauce separately, no issues with that. Some tips:
- Don’t skip the ingredients mentioned in the sauce. Each one plays a role in the final taste of the sauce.
- My wife used the sauce with zucchini noodles instead of the fettuccine and the sauce was so delicious that it could work with any type of pasta
- Do sprinkle your favorite Italian seasoning on the top to give it an extra flavorful kick
