I found this amazing recipe on a blog that I have started following regularly. The colors and flavors of this dish are absolutely amazing and proof was in the speed at which my 10 year old devoured his “veggies”

While the recipe itself is quite straightforward, I made a few tweaks:

• I stir fried the noodles a bit before mixing the peanut sauce. This really helped the sauce mix well with the noodles
• I did not have fresh ginger and garlic but I substituted with a store bought paste + garlic powder
