I have tried baking vegan things many times in the past and have always failed. It either never rises, is under cooked or just plain yuck in taste. In the spirit of trying, learning and growing I never give up and keep experimenting till I succeed. I am happy to present the first recipe for a vegan banana bread which turned out to be excellent! Since the base for this was homemade oat flour it’s also gluten free
The bread has very few ingredients, is super health and not overloaded with sugar which for our family was the perfect fit. This time I did not make any tweaks to the recipes other than using a cake beater to mix the stuff rather than using elbow grease. The end result was great and was rated a 4 out of 5 by my son!
