Healthy Vegan Breakfast Potatoes

I definitely have a soft spot for breakfast potatoes whenever we go out for brunch and honestly sometimes that is the only vegan / vegetarian thing I find on the menu. Many times there is just no way to get the same rich feeling and taste in food without the “unhealthy” items in it but when I came across this recipe it definitely looked promising, so I gave it a try.

A couple of tips on following the recipe:

  • Don’t skip the paprika in the seasoning, it is definitely one of the key ingredients to get the flavors out
  • If you have nutritional yeast do add it as it gives a cheesy flavor to the potatoes
  • Follow the steps for caramelizing and don’t just cook everything together as this is why gives the sticky texture of everything similar to oil
